Pineapple Crispy Pork
Overview
I have always been interested in pineapple cuisine, but lazy cancer patients always tend to procrastinate. . . After five years of diving into the food world, I posted a recipe that really needs some self-examination. . So...well...I forced myself to buy a pineapple on Friday night and use the weekend to make a recipe for sweet and sour pork. As for why it turned into pineapple crispy meat, that’s another story -_-#

Add egg white, pepper, salt, ginger (ginger juice is best, if not available, shredded ginger can be substituted, remove before frying), marinate for half an hour
-
When marinating the meat, you can start boiling the pineapple in sugar water to remove astringency. Appropriate amount of rock sugar. Cook until the saccharified water boils, then remove from the pan and cut into small pieces over medium heat for 3 minutes.

Cut the tenderloin into cross cuts

Mix the starch and flour and spread evenly over the meat.

When the oil in the pan is 80% hot, pour in the meat pieces and spread them loosely to prevent them from clumping. Serve when slightly yellow.

Fry again. It turns out that I am a very greedy person, and I wanted to fry it to a nice color, so I kept frying it until I found that it had turned into small crispy meat when it came out of the pan. . . The sweet and sour pork still needs a bit of texture.
