Prepare ingredients. Soak the fungus in flour and water for two hours, shred the green onion and mince the ginger.

Slice the sweet melon and squeeze the juice from the tomatoes.

When the pan is hot, add a little rapeseed oil, sauté the onion and ginger until fragrant, then add the sweet melon and stir-fry.

Add fungus and stir-fry.

Add a little salt and stir-fry after three minutes.

Add tomatoes and stir-fry for two minutes.
