Overview

Last time I fried steamed buns at home, I had some noodles left and I didn’t want to go to trouble, so I tried to make a few small twists. I didn’t expect that the method I imagined was correct. This time I mixed the noodles and made some small twists.

  1. Mix flour, matcha powder, salt and baking soda, and add appropriate amount of warm water.

  2. Knead into soft dough.

  3. Take a small piece of dough and roll it into a strip as thick as udon noodles and 45cm to 50cm long.

  4. Fold both ends of the long strip in half and twist in opposite directions with both hands until the entire noodle forms a thread. (When taking the photo, both hands were released, so the noodles were loosened. Everyone should twist them tightly, basically twisting both ends 10 times.)

  5. Then lift the two ends and fold them in half, and the noodles will twist into twists on their own. If they are too loose, you can twist them a few more times with your hands, and pinch the joints tightly with your hands.

  6. Heat the oil pan and fry the twists in the pan.

  7. After the twists float, fry until golden brown. Don't fry for too long.
