Wipe the king oyster mushrooms clean with a slightly damp kitchen towel and cut into pieces; mince the garlic; cut the green onion into flowers; cut the pepper into rings.

Heat a pot over medium-high heat and add a little oil. When the oil is hot, add the king oyster mushrooms and stir-fry for 5 minutes until the surface is golden and the steam on the surface has dissipated. Drain the oil and set aside.

Leave a little oil in the pot, reduce the heat to medium-low, add chopped green onion, minced garlic, and chili pepper rings and sauté until fragrant. Add salted eggs, crush them with a spatula, and stir-fry until bubbly.

Add the king oyster mushrooms and stir-fry until the mushrooms are coated with salted egg and the surface is slightly dry. Sprinkle with appropriate amount of white pepper and serve.
