Peel the purple sweet potato, cut into thick slices, put it on a plate and steam it in a steamer, take it out, grind it into a puree with the back of a spoon and set aside.

Melt 6 grams of yeast with warm water not exceeding 35 degrees and let it sit for 5 minutes.

Put the ingredients for ordinary dough (i.e. 150 grams of flour, about 75 grams of warm water, and 3 grams of yeast) in one of the basins and knead it into a smooth white dough. Cover with a semi-moist kitchen towel and leave to ferment in a warm place.

Put the ingredients for the purple sweet potato dough (i.e. 100 grams of flour, 50 grams of purple sweet potato, 3 grams of yeast, and about 30 to 50 grams of warm water) into another basin, knead into a smooth purple dough, cover it with a semi-wet kitchen cloth, and let it ferment in a warm place.

Let the dough rise for 2-3 hours until it doubles in size.

The inside is uniformly honeycomb-shaped, which means the fermentation is complete.

Knead the fermented dough repeatedly until there are basically no air bubbles inside the dough after cutting it with a knife.

Roll the two kinds of dough into moderately thick and equal-sized dough pieces.

Stack the two dough sheets together, and then roll them out gently to make the two dough sheets fit together completely.

Roll the two dough pieces inward from both sides, being careful not to roll them all the way to the end, leaving some less.

Then cut into equal parts.

Each two pieces of dough are cut back to back, with their backs touching.

Then use chopsticks to pinch the lower part into a butterfly shape. Then arrange the butterfly whiskers with your hands to become a green butterfly roll.

Put cold water in the pot, apply a layer of cooking oil on the grate, and then put the butterfly rolls. The distance between them should not be too close, otherwise they will stick together. Cover the pot and let it rise for 15 minutes. Then bring to a boil over high heat, turn to low heat and steam for 10 minutes and then simmer for 5 minutes.
