Cut the pork belly into thin slices.

Soak the yuba in advance until soft, blanch it in a pot of boiling water for about 1 minute, remove, drain and cut into sections (if using fresh yuba, ignore this step) cut the green onion into sections and cut the pepper into rings.

Heat the pan with cold oil, add the pork belly slices and stir-fry until it changes color and spits out oil. Add star anise and cinnamon and continue to stir-fry until fragrant.

Add cooking wine, scallions, chili rings, light soy sauce, and dark soy sauce and stir-fry until fragrant.

Add 1 cup of water, bring to a boil, then turn to medium heat and simmer for about 6 or 7 minutes.

Add the yuba and stir-fry evenly and continue to cook over medium heat for 5 or 6 minutes.

Add salt and sugar, stir-fry, and turn to high heat until the soup is almost dry. Sprinkle in some chopped green onion.

Remove from pan and plate.
