  1. Peel the eggplant and set aside the tomatoes

  2. Cut the eggplant into strips

  3. Cut tomatoes into cubes

  4. garlic slices

  5. Add eggplant strips to cornstarch and mix well

  6. Put it into the oil pan and fry until the skin becomes hard and take it out

  7. Place in a bowl and set aside

  8. Heat oil in a wok, add chopped green onion and shredded ginger and stir-fry until fragrant

  9. Pour in tomato pieces and stir-fry

  10. Add salt and sugar

  11. Fry until soft

  12. Pour in the eggplant strips

  13. Stir well
