Home-cooked tofu

Overview

Du Niang said: Tofu is the most common soy product, also known as water tofu. The main production process is pulping, that is, soybeans are made into soy milk; second, solidification, that is, the soy milk is solidified into a gel containing a large amount of water under the combined action of heat and coagulant, that is, tofu [1]. Tofu is the main raw material of vegetarian dishes in my country. It was unpalatable in the memory of our ancestors at first. After continuous transformation, it has gradually become popular and is known as plant-based meat. Tofu can be produced all year round without seasonal restrictions, so during the off-season of vegetable production, the variety of dishes can be adjusted. Tofu is divided into southern and northern tofu. The main difference is the amount of gypsum (or brine). Southern tofu uses less gypsum, so its texture is tender and the moisture content is about 90%; northern tofu uses more gypsum, and its texture is older than southern tofu, with a moisture content of 85-88%. Tofu is a traditional Chinese food that is delicious and healthy. Tofu is generally made from black beans, soybeans, peanuts and other beans with higher protein content, which can be used to make it. Nature and flavor: Sweet, salty, cold, non-toxic. Efficacy and Indications: It is mainly used to widen the middle and replenish qi, reconcile the spleen and stomach, eliminate fullness, clear the turbid qi in the large intestine, clear away heat and disperse blood.
