-
Prepare cucumbers and dried shrimps. Wash the shrimp skin and peel and remove the flesh from the cucumber.
-
Grate the cucumber into shreds with a grater, add a small spoonful of salt, and marinate the water.
-
Squeeze the pickled cucumber water into the bowl without pouring it away.
-
Use the squeezed cucumber water to knead the dough, slowly add water, and use chopsticks to stir into cotton wool.
-
Knead the dough with your hands into a smooth dough and let it rest for 30 minutes, kneading the dough again in the middle.
-
Add dried shrimps and vegetable oil to cucumber shreds after squeezing out the water, and mix well. I like a light taste, so I don’t add chicken essence. Besides, the shrimp skin is also very delicious.
-
After the dough has risen, roll it into long strips with your hands and cut into small pieces.
-
Use a dumpling stick to roll the dough into a small round piece, try to roll it out as thin as possible, and wait until it is steamed to have a nice color.
-
Add appropriate amount of cucumber filling.
-
Wrap into dumplings.
-
Place in a steamer and steam for 10 minutes.
-
Light and delicious.
-
Prepare a sauce according to your favorite taste.
