Mix flour and warm water in a ratio of 2:1 and add less salt so that the dough you make will have gluten. The mixed noodles need to wake up for a while, about 30 minutes.

Wash and drain the leeks.

Pick out the shrimp threads from the shrimps and steam them for 5 minutes. Set aside

After the dough has risen, knead it until smooth.

Put some oil in the pot, pour in the beaten egg liquid and stir-fry. Don't make it a little mushy. The eggs should be light yellow. Fry until the eggs are cooked. Use a spatula to crush the eggs in the pot.

Chop the steamed shrimps into small pieces. Don’t chop them too finely, otherwise they will lose their texture.

Add the crushed cold eggs into the leeks, then add the seasonings and shrimps mentioned above, mix slowly and gently, and let rest for 5 minutes.

In these 5 minutes, you can open the dough, roll it into long strips, cut it into sections, and then start kneading the dough and making big dumplings

Heat up the oil, put the dumplings down and fry them (don’t use too much oil, as they will burn easily if they are too hot. Fry on low heat, otherwise the outside will be burnt and the inside will be undercooked if the heat is too high. Use a little more oil than usual for frying boxes)

Fry over low heat until golden brown. (You need to rotate during the frying process. If you fry alone, one side will be burnt and the other will be white)
