Stir-fried spring bamboo shoots
Overview
In spring, spring bamboo shoots are the most crispy, tender, delicious, and fragrant! For this recipe, I used a piece of fat meat and stir-fried the oil, then used a little lard, oil residue and spring bamboo shoots to blend together to highlight the delicious taste of this dish. I remember that my favorite fried food with oil residue has been my favorite since I was a child. The aroma is unforgettable in my memory.

Use a knife to peel off a piece from the root and then remove the bamboo shoots layer by layer

Wash the prepared spring bamboo shoots

You can slice or dice them into pieces and blanch them in water

Prepare a small piece of fat, wash it, remove the skin and cut it into 1 cm thick slices.

Put the fat slices into the pot and stir-fry out the oil over low heat

Smash garlic cloves

Stir-fry the fatty meat until golden brown. The excess oil can be used in cooking to make it more delicious than vegetable oil.

Serve in a bowl and set aside

Pour in an appropriate amount of vegetable oil and stir-fry the bamboo shoots.

Add light soy sauce, oyster sauce, dark soy sauce, sugar and salt and continue stir-frying.

Pour in the oil residue and stir-fry. Add 1 tablespoon for a very fresh taste

Add the garlic cloves to the pan and stir-fry until fragrant. Pour in sesame oil and remove from the pan.
