Tomato Lean Pork Rice Noodles
Overview
The first time I ate Jiangxi rice noodles was when a colleague from Jiangxi brought me a pack from my hometown. Then I fell in love. So I occasionally buy a pack or two in the supermarket for backup. Today’s rice noodles with tomato and lean meat are both simple and delicious. Everyone in the family will love it!

All ingredients (slice the lean meat, add appropriate amount of salt, peanut oil, corn starch, and soy sauce and marinate for a few minutes; soak the rice noodles about 1 hour in advance).

Boil water in a pot, blanch the rice noodles, and blanch the tomatoes until the skin cracks.

Peel the tomatoes and cut into small pieces.

Heat oil in a pan, add tomatoes and fry until soft.

Add two bowls of water and bring to a boil.

After the water boils, add the rice noodles and lean meat.

Cook over high heat for a few minutes and then season.
