Wash the lotus seeds and soak them overnight to remove the lotus core inside;

Put the soaked lotus seeds into the pressure cooker and fill it with water that covers the lotus seeds;

Cover the pot, turn on the heat, turn to low heat for 20 minutes and then turn off the heat;

After the gas has subsided, open the lid;

Crush the cooked lotus seeds while they are still hot with a wooden spatula;

Heat the wok and add oil (generally enough oil for cooking);

Put the cooked lotus paste into the pot, stir-fry evenly over low heat with a wooden spatula;

Add about 50 grams of sugar for the first time and continue to stir-fry;

Fry until the water content of the lotus paste becomes less, then add 30 grams of sugar for the second time;

Stir-fry until the sugar dissolves, then add corn oil and continue to stir-fry;

Fry until somewhat dry. When stirring becomes difficult, add 30 grams of sugar for the third time. After the sugar dissolves, add an appropriate amount of corn oil;

Stir-fry the lotus paste until it forms a ball. When the stirring becomes more laborious and the finished product is very dry, the lotus paste is ready. It can be used to make moon cakes, steamed buns, and glutinous rice balls, all of which are good! !
