Pork Ribs with Braised Scallions and Potatoes
Overview
Today I made braised potato ribs with green onions. Instead of using potato cubes, I used potato balls. The texture is better than potato cubes when cooked, and the appearance is better than stewed potato cubes. At least the soup will not be sticky and thick

Put the ribs into a pot of cold water and bring to a boil

Remove from the pot and rinse thoroughly

Accessories: green onions, ginger, garlic, star anise, bay leaves

Pour an appropriate amount of oil into the wok, about the same amount as usual for cooking, add a small piece of rock sugar and stir-fry until the sugar color turns

Stir-fry rock sugar, add onion, ginger and garlic and sauté until fragrant

Add the pork ribs and stir-fry

Pour in appropriate amount of cooking wine and stir well

Pour in appropriate amount of light soy sauce and stir-fry until browned

Add star anise and bay leaves

Pour an appropriate amount of boiling water and wipe it over the bones

Bring to a boil over high heat, then reduce to low heat and simmer until the ribs are almost cooked and add the potato balls

Add appropriate amount of salt and simmer for a while

Bring the soup to a boil over high heat and reduce to a thick consistency. Don’t make the soup too dry. The rice mixed with the soup will be very fragrant

Sprinkle some coriander on the finished product
