Ingredients are ready: cut chicken gizzards into small slices, shred ginger, cut pickled beans, pickled peppers, fresh red peppers, and garlic sprouts into small pieces as shown

Heat oil, add shredded ginger and stir-fry until fragrant, turn up the heat, add pickled peppers, pickled beans and fresh red peppers and stir-fry for one minute

Stir-fry until the chicken gizzards are cooked, add the garlic sprouts and stir-fry for one to two minutes until the garlic sprouts are no longer spicy, add salt and chicken essence. Since pickled beans and pickled peppers contain salt, it is not advisable to add too much salt.
