The simplest chocolate cupcake, easy to make; all fat comes from mayonnaise, healthy and no additives; due to the addition of mayonnaise, the inside is very soft and moist, even if it is cooled, it is still very soft; the chocolate flavor is rich and attractive

Mix medium flour, cocoa powder, baking soda and salt, sift and set aside

Beat sugar and eggs until white and fluffy. Add mayonnaise and vanilla essence and mix well.

Add half of the dry powder mixture in 1 and mix evenly. Add half of the boiling water and mix evenly. Add the remaining dry powder mixture and mix well. Add the remaining boiling water and mix evenly. Do not over mix during the entire process to allow the batter to become chewy. The batter is very dilute, which is normal.

Pour into the mold, if you want normal height cupcakes, 2/3 full

Place in an oven preheated to 175C and bake until a toothpick inserted comes out clean, about 22 minutes.
