Wash the pomfret, remove the gills and scales.

Make a few cuts on the fish body, add salt, cooking wine, Sichuan peppercorns and marinate for 10 minutes.

Prepare onions, ginger and garlic

Blot the water with absorbent paper.

Pat on dry starch.

Pour 93 corn germ oil into the pot, heat it to 60%, and add the pomfret.
