Cut two heads of garlic into mince, rinse half with water, and then drain

Wash half of the minced garlic, add a little starch, fry at 40% oil temperature over low heat

Marinate: Use cooking wine, sugar, salt and pepper for scallops, about 20 minutes

Clean all the scallops, brush the outer shell with a brush, soak the vermicelli in advance until soft, blanch it in a pot under boiling water, remove and dry, add a little salt and oil, mix well and set aside

The marinated scallops are placed on top of the vermicelli as shown

Sprinkle the mixed minced garlic, pour the juice from the marinated scallops, drizzle some abalone juice or steamed fish soy sauce, and steam for 5 minutes in a steamer. Be sure not to steam for too long. Remove from the pan, cut cilantro and place on top for garnish.

Reheat the oil for frying the minced garlic in the pot, add the scallions and peppercorns, and fry the scallions slowly over low heat

Pour hot oil on the scallops (the above part was made before, the following part was made today, but the quantity is very large and no scallop shells are used)
