Steps
-
Cut the ribs into pieces and press them in a pressure cooker for 6-12 minutes. Add a little salt and ginger slices while pressing
-
Take out the ribs, sprinkle with a little starch and flour, and mix evenly.
-
Use two eggs, half a packet of cornstarch, appropriate amount of flour, and mix into a whole egg paste.
-
Cover the spareribs with egg batter.
-
Put it into a 60% hot oil pan and fry until it is set.
-
Take it out and fry it for the first time. There will be some residue on the surface of the ribs, so clean them up.
-
Then fry in 80% hot oil until golden brown and take out.
-
Take the oil from the pot, add the onion and ginger and saute until fragrant, then pour out the ginger and onion and reserve the oil.
-
Add tomato paste and sugar.
-
Add a little vinegar to make sweet and sour sauce.
-
Pour in the pork ribs, stir evenly and serve.
