Cold salad with special herbs and vegetables---Nepeta japonicus
Overview
Nepeta is a specialty herb from Henan Province. This herb comes from the vast basil family. It looks very similar to the Nine-Story Pagoda (Jin Bu Huan), but the smell is almost the same as lemon basil. This herb-lemon taste is not as good as lemon basil, but at the same time it has a hint of the fennel and star anise flavor unique to the nine-layer pagoda. So it’s really not easy to tell the difference. But they are all herbs and vegetables of the same category. As long as they taste good, it doesn’t matter what they are called!

Even if you grow it yourself, soak it in salt water for 10 minutes to disinfect it. Remove the soaked Nepeta and put it on a plate.

Mix vinegar, salt, sesame oil, and chili oil into juice. Nepeta itself has a strong aroma, so the simpler the sauce, the better. You can also just use salt and sesame oil

Take out the Nepeta, pour the bowl of juice over the Nepeta and mix well
