Eggplant with Northeast Sauce
Overview
I have been eating this sauced eggplant since I was a child. I remember my aunt making it the best. The eggplants are so oily and fragrant with the farmhouse sauce. A bowl of rice can be devoured in no time.

Wash the eggplant and dry the surface of the eggplant

Farmhouse sauce is ready

Heat the oil in the pot

Add eggplant and fry over low heat until

Turn over in the middle, don't let the eggplant burn at the bottom,

Fry until the skin becomes crepey and the eggplant becomes soft

Add farm sauce
-
Add a little more water and simmer for a while to allow the eggplant to fully infuse the flavor of the sauce

When there is little soup left, turn off the heat.

Serve it out and sprinkle with coriander, or mix with shredded chives. It goes well with rice.
