Steps

  1. Wash the pork belly. I only used 1/3 of the pork belly for this meal. Wash the rest and put them in plastic bags and put them in the refrigerator

  2. Wash garlic sprouts

  3. Chop the garlic sprouts and set aside

  4. Put the pork belly into cold water, cool water ~ add green onion segments, peppercorns, star anise, and a little fresh chicken juice (because it is dinner and it is not advisable to eat ginger at night, so I did not add ginger slices)

  5. Cook until chopsticks can be easily inserted into the meat, then stop the heat

  6. Take out the meat

  7. Cut the meat into 2 mm thick slices. I didn’t cut it properly this time. It was thicker and narrower, and the meat should have been cooked for a while

  8. Add a little oil to the pot. The pork belly will produce oil when fried, so don’t add too much oil

  9. Stir-fry pork belly slices over medium heat

  10. Stir-fry the pork belly slices until slightly curled, add 2 spoons of Pixian bean paste

  11. Stir-fry over high heat

  12. Add chopped garlic sprouts
