Wash all vegetables; cut leeks into sections; chop green onions; soak vermicelli in warm water until soft; add cooking wine, soy sauce, and starch to shredded pork; break eggs into a bowl and beat with salt.

Put oil in the pot, heat the oil and simmer the pan with chopped green onion, then add the shredded pork until it is almost discolored, add the vermicelli and stir-fry for a while, add a small bowl of water, continue to stir-fry until the water dries and the vermicelli becomes oily, then take it out and set aside.

Put the oil in the pot, heat the oil for 5 minutes, add the bean sprouts, add vinegar along the side of the pot, stir-fry quickly and evenly, add the leeks and salt, stir-fry evenly, add the fried shredded pork vermicelli, stir-fry well and serve.
