Salt and pepper mooncakes
Overview
I like all kinds of Chinese dim sum, especially the crispy ones, which feel like they will fall apart after you take a bite. The puff pastries I made in the past were all sweet. This time I tried the salt and pepper flavor~

Place peanuts and walnuts in a baking pan.

Preheat the oven to 160 degrees for about 10 to 15 minutes.

Slightly chop the roasted peanuts and walnuts, add cooked black sesame seeds, 5g salt and pepper, 8ml vegetable oil and 10g flour.

Stir evenly into filling.

Water and oil skin = 85g all-purpose flour + 20g white sugar + 15g lard + appropriate amount of water. Pastry = 60g low-gluten flour + 25g lard.

Mix the two types of dough.

Divide the water-oil dough into 20g portions.

Divide the pastry dough into 10g portions.

Divide everything so that there are exactly 8 portions.

Roll out the water-oil dough, put in the pastry dough, and wrap it up.

Wrap everything up.

Take one and roll it out.

Roll up from top to bottom.

Do everything and relax for about 20 minutes.

Take a piece of dough and continue rolling it out.

I dipped my chopsticks in some red yeast rice powder and decorated it.
