Bacon Pork and Winter Melon Stew
Overview
Winter melon has always been my favorite ingredient, and there are many ways to make it. My favorite one is braised in braised sauce, and the other is stewed like this. Winter melon has the effects of clearing away heat and detoxifying, relieving summer heat, diuresis, lowering fat and losing weight. It is especially suitable for consumption in hot summer and dry autumn. Today's winter melon dish is made with bacon. The bacon is pork marinated in salt. The one I bought is Shanghai bacon (southern pork), which has a unique salty aroma. It is best to soak bacon in water several times before eating to remove excess salt to avoid being too salty. It is best to soak the bacon in water to remove excess salt, slice it and set aside. Cut the winter melon into evenly thin pieces, mince the green onion, slice the ginger, chop the green onion and slice the soaked shiitake mushrooms

Heat the cold oil in the pan, add the green onions, white ginger slices and stir-fry

Add hot water to cover the winter melon, you can add a little sugar to enhance the freshness

Bring to a boil over high heat, then turn to low heat and simmer for about a quarter of an hour. The winter melon is ripe when it turns almost transparent. I like softer winter melon, so I stew it longer

Because bacon is relatively salty, there is basically no need to add salt. Those with strong tastes can add a little salt to season according to their own taste. Reduce the juice over high heat and make the soup thicker.

It is not necessary to drain all the soup. Leave half of the soup in the casserole, bring to a boil over high heat, then simmer over low heat for two minutes
