Fish meat is rich in high-quality protein, tender and easily absorbed. The dumpling fillings made from fish meat are delicious and children can't put it down.

First soak some onion, ginger and pepper water.

A piece of fresh snakehead fish, cleaned.

Remove the head and slice the remaining parts (the fish head and bones can be put together to make soup).

Remove the skin from the fish and try to avoid the red meat between the skin and the meat as it will be fishy.

I use a Guoyu food processor.

Install a filter with the smallest holes, put the fish meat in and mix it into mince (this machine has the advantage of keeping fish bones and fascial skin out of the filter).

Put the fish filling, onion, ginger and pepper water, salt, sugar, oyster sauce, white pepper, eggs into the food processor and beat with electric power for 15-20 seconds.

As shown in the picture, the mixed meat is sticky.

A handful of leeks, washed and chopped.

Put into the fish filling, add chicken juice and sesame oil.

Mix well.

Use your own techniques to make dumplings (due to time constraints, the wrappers are bought ready-made, if you mind, you can mix the dough and roll the wrappers yourself).

After the water boils, add the dumplings, add water 3-4 times, and turn off the heat after they are cooked.
