Sweet and Sour Pork Ribs with Hawthorn Sauce
Overview
Yesterday my husband came back from buying pork ribs and said he wanted to eat sweet and sour pork ribs. Today I tried making this dish for the first time. I slightly changed the ingredients according to my own method and replaced the vinegar with the hawthorn sauce I made a few days ago. I like the taste of the finished product very much. It has a bit of hawthorn fruity aroma and is sweet and sour at the same time. I can't help but dip my chopsticks into the sauce and stuff it into my mouth when it's on the plate... The sweet and sour pork ribs have a sweet, sour and mellow taste. It's a good dish to go with wine or as an appetizer.

Wash the ribs and add them to a pot of cold water. After boiling for 1 minute, turn off the heat. Pour out the water from the first pass and rinse the pot. Add cold water again. Add the ribs, green onions, star anise and half a spoonful of white wine. Bring to a boil over high heat, then reduce to low heat and simmer for half an hour

After cooking, take it out and set aside. Keep the meat soup aside for later use. Do not pour it away

Heat a little oil in a pan, add sugar and fry until caramel color

Add the blanched pork ribs and stir-fry until caramelized

Add 2 spoons of hawthorn sauce and stir-fry until evenly mixed

Add cooking broth to cover the ribs (just soup, not the original ingredients in the soup), then add half a spoon of dark soy sauce, 1 spoon of very fresh flavor, bring to a boil over high heat, then reduce to low heat and simmer until the water is reduced by more than half, add 1 spoon of hawthorn sauce, season with appropriate amount of salt, and simmer until the water dries up, leaving a thick sauce (I forgot to take a photo before taking it out of the pot, let’s look at the finished product)
