Bad fish fillet
Overview
A simple home-cooked dish that gives fish and meat a slightly sweet taste, and is also good for entertaining guests occasionally.

The main materials are ready. Soak the fungus and mince the ginger, green onion and garlic.

Cut the fish into slices three centimeters wide and half a centimeter thick. Add 1/4 teaspoon egg white and 1/2 tablespoon starch.

Mix well and marinate for about 20 minutes.

Heat oil in a pan until it is 60% hot, add fish fillets and soak until cooked.

Remove and drain the oil and set aside.

Add minced ginger, minced garlic, sugar, a little salt, and a cup of clear soup (or water) to the wok and bring to a boil.

Add the fungus and mix well;

Add the fermented rice and cook evenly;

Finally, add the fish fillets to thicken the sauce, and finally add the chopped green onions.

Mix well and then serve.
