Peel the lotus root, wash it, cut it vertically into slices, and then cut it into strips.

Peel, wash and chop the ginger and garlic, wash and chop the green onion.

Unpack the mustard and pour it into a small bowl. Set aside.

Heat the wok, add cooking oil to heat, and sauté onion, ginger and garlic until fragrant.

Add the lotus root strips and stir-fry twice. Pour in half a small bowl of water and simmer for a while until the lotus root strips are cooked.
