Chop the chicken into small pieces and clean them.

Blanch the chicken pieces in the pot, then remove, wash and drain.

Peel, wash and cut potatoes into small pieces. Peel and wash chestnuts.

Prepare the onion, ginger and star anise. Soak the dried shiitake mushrooms, wash and cut them in half.

When the oil is hot in the pan, add the chicken pieces and stir-fry.

Stir-fry until the chicken is firm, add soy sauce and stir-fry until it is coloured.

Add onion, ginger and star anise and stir-fry for a few times. Add potatoes and chestnuts and stir-fry.

Add the mushrooms and stir-fry, then add a spoonful of soy sauce and stir-fry evenly.

Add enough water to simmer.

Simmer until the soup thickens and add green peppers.

Add salt and coriander and stir-fry evenly.
