Wash and drain the duck meat! Tear off the thick duck skin.

A can of beer is available.

Cut the seasonings and set aside.

Heat the pot, add the duck skin, press it with a spatula over low heat, and slowly press out the duck fat.

When both sides of the duck skin turn golden, add peppercorns, dried chili peppers, ginger and garlic and stir-fry until fragrant.

Pour in the duck meat and stir-fry to remove the water, then add cooking wine to remove the fishy smell, and stir-fry with fresh soy sauce and dark soy sauce to add color.

Add beer to cover the duck meat, simmer over medium-low heat for 20 minutes, add salt after 20 minutes and cook for another five minutes.

When the soup is almost dry, add sugar and chicken essence to taste.

Sprinkle with chopped green onion and serve.
