Stir-fried razor clams with leek and fungus
Overview
Bamboo razor clams are a specialty of our local seaside. They are named because their shells resemble bamboo knots. This kind of razor clams is rich in nutrients. The most common way to cook it in our local area is to boil it in clear soup, or use egg buns, or stir-fry with cucumbers and leeks, or serve it cold. This time, I used fresh leek moss and crispy fungus, which is simple and quick.

Peel the razor clam shells and wash away the sediment.

Wash the soaked fungus and cut the leek into sections.
