Overview

Usually, most hairtails are fried, braised, etc. If you eat too much, your taste buds will inevitably be picky. Today’s dish is a change from the usual method. Dried mushrooms soaked in water are stewed together, so that the hairtail absorbs the strong aroma of the mushrooms. The finished product is surprisingly delicious.

  1. Prepare the ingredients, soak the mushrooms in advance and wash them, remove the gills from the hairtail fish and cut into sections, beat the eggs into egg liquid. Add 1 tablespoon of cooking wine and a small amount of light soy sauce to the hairtail fish and marinate for 15 minutes.

  2. Add 300 grams of oil to the pan and heat it up, dip the hairtail into the egg liquid and stick it in a circle.

  3. Put into the hot oil pan and fry until both sides of the hairtail are golden brown.

  4. Assemble the fried hairtail fish.

  5. Remove the oil from the pot, leaving some base oil, turn on the heat again, sauté half of the garlic and ginger until fragrant, then add light soy sauce, an appropriate amount of salt, mature vinegar, and white sugar in sequence.

  6. Add about two bowls of water and bring to a boil. (If the amount of water is too much, salt, light soy sauce, vinegar and sugar should also be added)

  7. Add the hairtail fish and shiitake mushrooms and stir-fry carefully.

  8. Cover the pot, simmer over medium heat until the hairtail fish soup thickens and turn off the heat.

  9. Finished product is plated.
