Wash and cut the cowpeas into sections, drain and set aside.

Cut the pork belly into thin slices and slice the garlic and set aside. Prepare dried red pepper and Sichuan peppercorns

Add a little more cooking oil to the pot, and when it reaches 70% heat, add the drained cowpeas, stir gently, and cook over medium heat for about 3-4 minutes, until the cowpeas become soft and cooked.
