Overview

For shortbread, I use the method of making large puff pastry. In the original recipe, the water-oil noodles use medium-gluten flour. I don’t have this kind of flour at home. I made it with high-gluten flour and cornstarch. Dear friends, if you have all-purpose flour, use all-purpose flour. The crispy pancakes are so delicious that I can’t stop eating them.

  1. Ingredients: flour, corn oil, yeast powder, cake flour, sugar.

  3. Mix yeast powder with a little water.

  4. I mixed 120 grams of high-gluten flour and 30 grams of cornstarch into medium-gluten flour, added water, corn oil and yeast water, mixed and kneaded into a water-oil dough.

  5. Cover with plastic wrap and let rest for 5 minutes.

  6. Add corn oil to low-gluten flour and knead it with your hands to form a dough (kneading can be done on a panel for more convenience).

  8. Roll the dough into a large rectangular shape. Press the dough into a small rectangle and spread it on the dough. Then fold it in half and pinch the edges tightly.

  9. First, gently press the dough with your hands, then use a rolling pin to slowly roll it out from the middle to both sides, and then fold the two sides toward the middle like a quilt, and then fold it again.

  10. Roll out into a larger rectangular or oval shape.

  11. Slowly roll the dough sheet from top to bottom into a long strip.

  13. Take out a small dough, flatten it and fold the exposed ends of the pastry towards the middle.

  14. After the dough is formed into a round shape, gently flatten it with your hands. Make the remaining small dough ingredients in sequence.

  15. Brush the egg white liquid on the shortbread base, stick it with black sesame seeds, and let it sit for a few minutes before baking. Preheat the oven to 200 degrees for upper and lower heat. After preheating is completed, put the shortbread dough into the oven for 18 minutes. When the shortbread is evenly golden brown, turn off the heat, take it out of the oven and let it cool before eating.
