  1. When you buy the tofu, sprinkle salt evenly on all 6 sides

  2. When cooking, rinse the tofu with salt and cut it into small pieces

  3. Mince the ginger, garlic and Sichuan peppercorns and place them together. Mince the meat. Prepare chopped green onion, black bean, chili powder and watercress

  4. Fry the meat until golden brown

  5. Add ginger, garlic, and pepper and stir-fry until fragrant

  6. Add watercress and stir-fry till red oil comes out
