People who have read "In Search of Lost Time" may not forget the dessert that appears many times in the book-madeleines. It is said that the author Marcel Proust came up with the idea for "In Search of Lost Time" while drinking tea and eating cake. Madeleine cakes also appear repeatedly in the novel. Madeleines (or Madeleine commerce) are a classic French dessert. Her recipe and production are very simple, making this classic dessert popular among millions of baking enthusiasts.   1. Put the eggs and granulated sugar into a bowl (2 eggs, I knocked 1 until I remembered)

  2. Mix until the sugar becomes sugary, then sift in the mixture of flour and baking powder, mix well

  3. Melt butter in hot water

  4. Add the melted butter into the batter and stir evenly

  5. Divide the mixed batter evenly into 2 parts, divide 1 part into 2 parts equally, add matcha powder to 1 small part, mix well

  6. Add another small portion of cocoa powder and mix well

  7. Put the 3 portions of batter into the refrigerator to chill for more than an hour

  8. Return the refrigerated batter to temperature, mix well and put them into piping bags respectively, and squeeze them into the madeleine mold as you like

  9. Fill the mold with batter until 80% full

  10. Preheat the oven to 190 degrees and heat the middle rack up and down for about 15 minutes

  11. Immediately after taking it out of the oven, turn it upside down and let it cool (I use a non-stick mold from the school kitchen, other molds that will stick must be oiled and sprinkled with flour first)
