Spicy Crab Fried Rice Cake---It’s that crab time again
Overview
It’s time to eat crabs again, and everyone in my WeChat circle of friends has been showing off all kinds of things recently. For me who is a big fan of taste, haha, you know, although the steamed version is more authentic, the crab pots outside will add rice cakes, potatoes, etc., so today I will try adding rice cakes first. It turns out that the taste is not worse than the outside, and it is mainly affordable. It costs at least 500 or 600 to eat out to feel that it is enough. Oh my god, if you eat it at home, you will not be able to beat yourself to death, how can it be said to be refreshing...

Actually, it’s a pity to use hairy crabs for this, but I didn’t see any swimming crabs after coming here, so I just used them
-
I bought rice cakes in this shape. They are sold in wet markets and places that sell noodles
-
Peel the onion and cut into pieces
-
It’s okay to peel the garlic and cut the ginger into pieces
-
Cut green onions into small pieces
-
Now let's deal with the crabs. Use big scissors to cut off the big crab claws to prevent them from being pinched. Then use a knife to cut from the middle of the belly. If you can't cut it off, just use scissors to lift it up
-
It will look like this after it is done. Remove the one on the belly, then remove the gills, wash off the dirty ones, and do the same with the rest
-
Add a little cooking wine and pepper to marinate
-
Clean the crabs and drain the water, then roll them one by one in starch and shake off the excess starch
-
All done
-
Pour a little more oil into the pot. When the oil temperature is about 70% hot, add separate pieces of rice cake. [The oil temperature for fried rice cake should not be too high and the time should not be too long, as it is easy to explode.] Fry it for a while and you can see that the appearance will change.
-
Put the crab pieces into the frying pan and stir them with chopsticks to prevent them from sticking together because they are stained with starch
-
Fry until golden brown and it’s ready to serve
-
Wash the pot and add oil, heat it over low heat, add the chopped ginger, garlic, and scallions and saute until fragrant
-
The next step is to add a little fresh peppercorns and some commonly used spices, just put them in whatever you want, haha
-
Finally, pour in the chili peppers, as the color of the chili peppers may become mushy easily over time [so when adding the dried chili peppers to the pot, first immerse them in cold water]
-
Stir-fry a tablespoon and a half of bean paste into red oil
-
Add the fried crab pieces and stir-fry evenly, coating each crab piece evenly with the sauce
-
A spoonful of cooking wine
-
Half a spoonful of light soy sauce
-
Add half a bowl of hot water and simmer over medium heat
-
When one-third of the soup is reduced, add the fried rice cake pieces
-
Finally add a little salt, chicken powder, garlic sprouts, stir-fry evenly
-
The whole house is filled with the scent of crab, making me salivate

Last time when Sister Shu came to my house, I thought she wouldn't be used to strong-flavored dishes, so I made a dish with strong flavors, spicy hairy crabs. What I didn't expect was that Sister Shu actually enjoyed the meal. Haha, I didn't cook any rice today, so I cooked this pot of hairy crabs by myself. . . It feels so good to eat

The best state of life for a person is to read when you should read, play to your heart's content when you should play, appreciate outstanding people when you see them, and don't despise when you see poor people. Have your own small life and interests, don't have to think about changing the world, and work hard to live out yourself. Focus on yourself when no one loves you, and have the ability to embrace each other when someone loves you.
