After cleaning the crab, remove the internal organs. This step is very important. To eat crabs, you need to remove four parts: one is the gills, which are on both sides of the crab body and are shaped like eyebrows and are arranged in strips; the other is the stomach, which is located in the front half of the crab valley, close to the crab roe and is shaped like a triangular packet; the third is the heart, which is located in the middle of the crab roe or oil, close to the stomach and is hexagonal and difficult to identify; the fourth is the intestines, which are located in the middle of the navel and are in the shape of a strip. These four things contain a lot of bacteria, viruses, and dirt and must be removed.

The cleaned crabs can be pickled immediately
