Prepare ingredients.

Remove the heads, skins and shrimp lines from the shrimps, wash and dry them, add a small amount of cooking wine, light soy sauce, and salt and marinate for a while to enhance the flavor.

Cut the tofu into cubes, blanch in water for 2 minutes, and remove.

Cut the carrots into small dices, and chop the green onions, green onion leaves, garlic, and ginger separately.

Pour cooking oil into the pan, heat the oil and fry the tofu until it is slightly brown, add the onion, ginger and garlic, and stir-fry until fragrant.

Add appropriate amount of water, salt and oyster sauce, stir evenly, bring to a boil over high heat, turn to medium heat and simmer for 5 minutes.

Add the shrimp and diced carrots, stir-fry a few times, and continue to simmer for 3 minutes.

Stir-fry over high heat to reduce the juice, and sprinkle with chopped green onion.

Remove from pan and plate.
