Get the ingredients ready.

Peel the loofah, cut in half from the middle and then into slices, beat the eggs and chop the coriander.

Put the pot on the fire, pour in the stock and bring to a boil over high heat. Add the loofah slices and cook for about three minutes. Turn to low heat, pour in the beaten egg liquid, stir gently, add salt and sprinkle with coriander.
