When you see this picture, what do you think of? Muffin cake? No, it's not, it's a cake. It's just that I made it into the shape of a muffin cake and used a paper cup as a mold. Don’t underestimate this steamed cake. Its ingredients are not ordinary. I made it with glutinous rice flour, cornmeal, and ordinary flour. I also added red dates. It is fragrant, soft, and waxy. It tastes better than muffins. It doesn’t need butter, and it only needs to be steamed. It is very healthy and suitable for children to eat as breakfast.

  1. Weigh the cornmeal, glutinous rice flour, and flour into a slightly larger basin. Add the beaten eggs and sugar. Then put the yeast in a cup. Add a small amount of water and stir until it melts. Pour it into the basin. Take the water cup in your left hand and the chopsticks in your right hand. Add water while stirring the flour until it becomes loose. Then use a silicone spatula to stir the flour into a paste. (Note that during the operation, it is not easy to add all the water at once. Add it slowly. The flour will not be too dry or too thin, and it will be thick enough to stick together.) Finally, add the chopped red dates and stir evenly.

Brush a thin layer of oil on the paper cup (there are no disposable drinking cups or other molds available), dip your hands in some water, and put the mixed batter into the paper cup, filling it only seven-quarters full. Remember not to fill it too full. Then put some red dates on the surface for decoration.

  3. Ferment the batter until it is 1.5-2 times its original size, put it in a pot with cold water, steam it over high heat for 20 minutes, turn off the heat and simmer for another 3 minutes. After cooling, remove the film and tear off the outer paper cup.
