Seafood rice dumplings
Overview
Seafood and meat rice dumplings are a traditional Han Chinese food unique to southern Fujian and a festival food custom. Roast pork rice dumplings are made in Quanzhou, Xiamen and other Fujian areas. Roast pork rice dumplings have a long history and are characterized by being sweet and tender, not greasy, and meticulously crafted. In fact, meat rice dumplings are also a type of snack here. There are special meat rice dumpling shops selling them, and there are many flavors to choose from. It was a festival, so I made rice dumplings with my friends

Soak the glutinous rice in water in advance and prepare mushrooms, scallops, squid and shrimp

After the pot is hot, add some fatter meat and stir-fry out the excess oil

Add pork belly and stir-fry

Add soy sauce and stir-fry until combined, set aside

Leave oil in the original pot, add shrimps, scallops and squid and stir-fry

Add mushrooms and fry

Add glutinous rice and stir-fry

Add soy sauce, salt, MSG and five-spice powder and stir-fry evenly

This is fried glutinous rice

First put a piece of pork belly on the bottom of the rice dumpling leaves

Add appropriate amount of fried glutinous rice

Put another piece of pork belly on top

These are wrapped rice dumplings

After wrapping, put it into a pressure cooker, add enough water to cover the rice dumplings, cook until the pressure cooker is out of gas and then cook for ten minutes

Drain the cooked rice dumplings and enjoy
