  1. Pour an egg into the flour and add warm water and knead the dough together with your hands to form a slightly hard dough. Let it rest for 20 minutes.

  2. Use a dough press to press the noodles to the width you like. If you don’t have a dough press, use a rolling pin to roll the dough into a round sheet and cut it into the width you like (thin noodles are more delicious when making cold noodles)

Brush a layer of oil on the bottom of the basket (or cover it with a basket cloth), put the noodles in, don't compact them, make them fluffy, put water in the pot, boil over high heat and steam for 10 minutes. (Of course, you can also throw the noodles directly into the pot and cook for 3 minutes before taking them out, but this method may make the noodles too soft and the taste will be poor)

  4. After 1 minute, remove the basket, pour the noodles into the water from the steamer, cook for 1 minute, and remove from the cold water. (Spread the noodles while cooking. Remember not to add boiling water. This is not cooking dumplings.)

  5. Drain the water first and add cooked vegetable oil (corn oil is also acceptable, but the taste is not as good). Use chopsticks to shake the noodles while adding oil.   6. Wash the chicken breasts and drain the water. Put the washed chicken into a pot of cold water, add a little cooking wine, green onions, and ginger slices. Bring to a boil over high heat for 5 minutes, then turn off the heat, cover and simmer for 10 minutes.
