Overview
In my hometown of Benxi, there is a kind of sausage, which we call noodle sausage, also called powder sausage. It is especially popular with everyone. The difference between it and sausage and air-dried sausage is that it has more starch, so we call it noodle sausage or powder sausage. I have been making sausages for many years. Prepare basic materials. Material packages are available online and do not contain additives

Mince the fatty meat part, cut the other half into large slices, not too thick, and mix the two kinds of meat

Pour 50 grams of garlic seasoning into the meat, mix well, and marinate for two hours to absorb the flavor

Noodles and intestines have a lot of starch. According to the ratio of 6 to 8 taels of starch per pound of meat, I put 6 taels of starch this time and then boiled it with water. Some places use old soup.

Then mix the meat and starch, mince a head of garlic, and add some salt. Be sure to taste the saltiness and adjust it yourself.

Check whether the casing is leaking and rinse with clean water

Prepare funnel and string

Grease the surface of the funnel and put it on the casing

Put the filling in and press it down with chopsticks or a small funnel like mine

There must be plenty of space on both sides of the casing head

Add water to the pot, fill the sausages under the warm water, add cooking wine, onion, ginger, star anise and Sichuan peppercorns, keep the heat low

When the water is hot, cook for 30 minutes. Remember, keep pricking the holes with a needle while cooking. Do not let the water in the pot boil. Prepare water on the side. When the water temperature in the pot is too high, add some cold water, otherwise the sausage will burst easily. There will be a lot of foam in the pot, don't move it, and the sausages can't be turned.
