Home-style stir-fried cabbage slices
Overview
An absolute home-cooked dish. One of the two main winter dishes when I was a kid, the other one is fried shredded pickled cabbage. The key to the deliciousness of this dish is to choose the variety of cabbage, and hemp leaves are the best. The cabbage I used this time was not very good and required multiple steps of blanching.

Steps
-
Cabbage, cut into diagonal slices.
-
Add water to the pot, add a little salt, and when the water boils, add the cabbage slices.
-
Blanch the cabbage until it changes color and becomes tender.
-
Remove from cold water to keep them crispy and tender.
-
Heat the wok and add oil.
-
Add the meat slices and stir-fry until it changes color slightly. Add chopped green onion, minced ginger, soy sauce, vinegar, and peppercorns. PS: Pork is too expensive. Grandma only added a handful of pieces of meat when cooking. Just say it.
-
Add hot pepper and stir-fry.
-
Add cabbage slices and stir-fry.
-
Add a small amount of water starch and continue to stir-fry a few times. Because the cabbage slices are blanched in advance, the frying time is relatively short, just 2 minutes.
-
Take it out of the pan and serve it on a plate, it's delicious.
