As for whether it is a writing box or a zygote, let’s put it straight here. It should be written as a zygote. The reason is that Tang Lusun’s book contains the writing zygote. Many restaurants sell zygotes, but without exception they are fried. Authentic zygotes are baked! ! ! My mother said that they used to be baked on something called a stove, but now I'm afraid you can only see it in folk museums. The baked noodles are not easy to knead, and are easy to dry out. Once the fried pancake is placed in the pan, it saves time and effort, and it will be fried naturally. Let me complain here that the main process in the basic parameters does not include baking. There is no cooking method with Chinese characteristics, which is very frustrating. My balls ached and I chose fried. My mother’s method is to knead the noodles with pure cold water. My own experience is to change it to half hot water and half cold water. The effect is almost the same when it is hot, but it becomes softer when it is cold.

Note that it is best to remove the vermicelli from the pot as soon as possible after cutting it, otherwise the vermicelli will stick into a lump. After the ingredients in the pot have cooled down, add the cabbage and season. I used salt and light soy sauce. If you are wrapping leek zygotes, add the leeks after the fried stuffing has cooled.
