Soak the dried shiitake mushrooms in warm water and set aside (you can also buy wet shiitake mushrooms directly without soaking them).

Cut the carrots into larger pieces and set aside.

Cut green pepper into cubes.

Debone the chicken thighs and cut into small pieces (you can also replace them with other chicken).

Heat oil in a pan, add carrots and stir-fry.

Add the onions and ginger and stir-fry, then add the chicken and stir-fry until the chicken changes color.

Pour in the mushrooms.

Add 2 tablespoons of light soy sauce, a teaspoon of dark soy sauce, a tablespoon of salt, and a tablespoon of oyster sauce to the pot and stir-fry evenly.
