I made a refreshing dish today, pickled sweet and sour radish slices! It has a crunchy texture, just the right amount of sour and sweet, and it tastes great when paired with a bowl of porridge!

Wash the white radish and cut into slices as thin as possible, about 2 mm.

Add salt to the cut radish slices and marinate for about 20 minutes to drain out the moisture.

Squeeze the water out of the radish slices with your hands. The white radish slices will appear transparent.

Make sweet and sour sauce. Pour light soy sauce, vinegar, and sugar into the bowl and mix well.

Pour the sweet and sour sauce into the radish slices until the juice covers the radish slices.

Cover with plastic wrap and marinate for 24 hours.
