Processed hairtail.

Prepare minced ginger and garlic.

Mix together the minced ginger, garlic, pepper, rice wine, salt and hairtail fish.

Marinate for 30 minutes.

Prepare fried rice flour and coat the hairtail fish in a thin layer of flour. When fried, it will be crispy on the outside and tender on the inside.

Put a little more oil in a hot pan than when cooking, then add the hairtail and fry over medium-low heat.

Once one side is set, turn over and continue frying on the other side.

Fry until both sides are golden and crispy.
